Ingredients
-
Citrus Cajun Rub by The Spice Guy
-
Jackpot Carolina Gold BBQ Sauce by PS Seasoning
-
Hot Pepper Bacon Grill & Wing Squeeze by Terrapin Ridge Farms
-
Livia's Salt Pepper Garlic
-
1/2 Spiral Cut, Bone-in Smoked Ham (6-8 lb)
-
1 stick (1/2 cup) Butter, cubed
-
1 Cup Dark Brown Sugar
-
2 Oranges, quartered
-
Fresh Thyme & Rosemary
Directions
Preheat your smoker or grill to 275 °F, using hickory wood.
Place ham in a cast iron skillet (bone side up) add 1 stick of butter cubed, 2 quartered oranges, 1/4 cup of Hot Pepper Bacon Grill & Wing Squeeze by Terrapin Ridge Farms and approximately 8 sprigs of thyme and rosemary.
In a small bowl, combine 1 cup of dark brown sugar with 2 Tbsp Citrus Cajun Rub by The Spice Guy and 1 Tbsp Livia's Salt Pepper Garlic. Mix until combined. Apply a small amount of Jackpot Carolina Gold BBQ Sauce by PS Seasoning to the ham and cover all sides. Season with the brown sugar/seasoning mixture.
Smoke ham at 275 °F for 2 hours.
After the first 2 hours, baste with the glaze formed in the bottom of the pan using a spoon or mop.
Remove from your smoker, let cool, and serve with the glaze.
Recipe Note
Pro Tips: For a deeper smoke flavor, smoke the ham at 220 °F for 4 hours before increasing the temperature to 325 °F for 30 minutes in order for the glaze to set. The leftover ham makes for great ham and Swiss sliders on Hawaiian rolls!
