Ingredients

1-2 Tbsp Sun Valley Musty Dust

1-2 Tbsp Old Southern BBQ Rib Rub

1/2 cup Lane’s “Itsa Vinegar” Sauce

1 rack St. Louis-style Spare Ribs

Yellow Mustard (binder)
Directions
Preheat the smoker to 225°F.
Remove the silverskin layer from the back of your ribs.
Rub both sides of ribs with yellow mustard as a binder, then apply a layer of Sun Valley Musty Dust, followed by Old Southern BBQ Rib Rub.
Place ribs on your smoker, bone side down, and smoke for 3 hours at 225°F.
Remove ribs and prepare to wrap them: On a sheet of aluminum foil, place a knob of butter every three inches, followed by a good sprinkle of Sun Valley Musty Dust and a healthy drizzle of Lane’s “Itsa Vinegar” Sauce. Place ribs bone side up onto the foil, laying the meat onto your butter / sauce / rub. Tightly fold the foil to create a seal.
Return ribs to smoker bone side up (so the butter is on the bottom). Smoke an additional 2 hours at 225 °F for tender, fall-off-the-bone ribs.
Flip the ribs over on your smoker and unwrap. Flip the ribs so they are meat-side up and baste with more Lane’s “Itsa Vinegar” Sauce. Smoke for an additional 30 minutes to an hour at 250 °F to allow the sauce to set.
Once the sauce has caramelized, remove the ribs. Let rest for 5 minutes, then slice, serve and enjoy!

Pro Tip: To help build bark on your ribs and keep them moist, spritz them every 30 minutes with apple cider vinegar starting at the 45 minute mark.
