Big Game Bites: Your Guide to Burnt Ends

Brisket & Bourbon Burnt Ends

Serves: 4-6 | Prep Time: 10 min | Cook Time: 2.5 hr | Grill or Smoker

These burnt ends are easy to make and absolutely delicious! Serve them up as juicy barbecue bites or as tasty barbecue sliders.

Ingredients

  • Lumberjack Seasoning Blend by PS Seasoning
  • Maple Bourbon Wing Sauce by PS Seasoning
  • 1 Brisket Flat or 1 Whole Small Brisket
  • 1 Stick Butter
  • 1 Shot Bourbon

Instructions

  1. Preheat your smoker or grill to 250 °F using wood or charcoal of choice.
  2. Preparing the brisket. Slice brisket into easy to work with sections.
  3. Slice chuck roast into 2 inch by 2 inch cubes.
  4. Add Maple Bourbon Wing Sauce by PS Seasoning as binder.
  5. On a baking rack, place chuck roast cubes about ½ inch apart. Season with Lumberjack Seasoning Blend by PS Seasoning.
  6. Smoke for 2 hours, then remove and add to your grill safe baking dish or foil pan.
  7. Add butter, bourbon, and 1/4 cup Maple Bourbon Wing Sauce by PS Seasoning.
  8. Increase grill temperature to 325 °F
  9. Mix together, covering all sides and place back in the smoker or grill for an additional hour or until about 203 °F to 205 °F internal temperature.
  10. Remove and let cool. Enjoy!

Spicy Pork Belly Burnt Ends

Serves: 4-6 | Prep Time: 30 min | Cook Time: 2.5 hr | Smoker

These pork belly burnt ends are little balls of fire! Consider this a WARNING!

Ingredients

  • Hattie Z’s Nashville Hot by the Spice Guy
  • The Wing Man Buffalo Sauce by The Spice Guy
  • 1 Pork Belly Slab (3-4 lb), cut into 2-3” cubes
  • 1/2 stick Butter or 1/4 cup Beef Tallow

Instructions

  1. Preheat your smoker or grill to 250 °F using wood or charcoal of choice.
  2. On a baking rack, place pork belly cubes about 1 inch apart.
  3. Season with Hattie Z’s Nashville Hot by the Spice Guy on all sides.
  4. Smoke for 2 hours, then remove and add to your grill safe baking dish or foil pan.
  5. Add butter or tallow, drizzle The Wing Man Buffalo Sauce by The Spice Guy.
  6. Mix together, covering all sides and place back in the smoker or grill at 325°F for an additional 45 minutes to 1 hour or until about 200 °F internal temperature.
  7. Remove and let cool. Enjoy!

Pro Tips: This pork belly is great in sliders, tacos, or served solo – pair with a single barrel bourbon for a delightful pitmaster snack!
