These marinated & grilled vegetable skewers are a delicious and versatile dish perfect for your next barbecue, picnic, or as a side dish for your next weeknight meal.

Marinade Ingredients
2 Tbsp Sun Valley Mustard Seasoning
1 Tbsp Old Southern BBQ Rib Rub
2 Tbsp Lane’s “Itsa Vinegar” Sauce
3 Tbsp Olive Oil
1 Tbsp Lemon Juice
2 Cloves Garlic (minced)
Combine all ingredients well and marinate sliced vegetables for at least 30 minutes, up to 2 hours.
Wash and cut the vegetables into even-sized chunks to ensure even grilling.
Prepare the marinade: In a small bowl, whisk together Sun Valley Mustard Seasoning, Old Southern BBQ Rib Rub, Lane’s “Itsa Vinegar” Sauce, olive oil, lemon juice, and garlic.
Marinate the vegetables: Place all the cut vegetables in a large bowl or resealable plastic bag. Pour the marinade over them and toss gently to coat all the vegetables. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator to maximize flavor.
Assemble the skewers: Thread the marinated vegetables onto the skewers, alternating the types of vegetables. If using cherry tomatoes, place them carefully as they can squish easily.
Preheat the grill to medium-high heat (about 375-400 °F).
Place the skewers on the grill. Cook for about 8-12 minutes, turning every 2-3 minutes, until the vegetables are tender and slightly charred.
Once the vegetables are cooked, remove them from the skewers (or serve as is). Optionally, garnish with fresh herbs, crumbled feta cheese and Melinda’s Jalapeno Ranch (either drizzled on, or as a dipping sauce) to kick them up a notch!
Recipe Note
Pro Tip: Since we’re using wooden skewers, soak them in water, apple juice, apple cider vinegar, beer or a liquid of your choosing for at least 30 minutes to prevent burning.
