Spiedini of Chicken and Zucchini with Almond Salsa Verde

These chicken skewers are a great and healthy way to fire up the grill.

Fire up your grill because we have a chicken spiedini recipe for you! Spiedini is Italian for "little skewers". Having such an amazingly intricate and great-tasting, herbal, nutty and salty flavored sauce like this one makes this best for grilled chicken, pork, fish or shrimp.

INGREDIENTS

  • 1/2 tsp. of freshly chopped thyme
  • 1 cup of garden-fresh chopped parsley
  • 2 tbsp. of toasted and chopped almonds
  • 3/4 tsp. of kosher salt
  • 3 tbsp. of freshly squeezed limes or lemon juice
  • Half tsp. of unprocessed oregano chopped into small bits.
  • 1 tbsp. of olive oil (specifically Extra virgin)
  • 1/2 tsp. of black pepper
  • ½ tsp. of grated lemon rind
  • 1 ground garlic clove
  • 2 tbsp. of fresh chives (chopped)
  • 1 ½ lbs. of boneless and skinned chicken breasts with each one sliced into pieces of 1 inch
  • 5 chopped zucchini into 1-inch slices

Instructions

  • Marinate a dozen 10 inch wooden skewers in a container filled with water for about half of an hour to avoid burning
  • Get the grill prepared then adjust the flame to medium level.
  • To assemble the salsa, mix the thyme, parsley, almonds, 1/4 tsp. salt, limes or lemon juice, oregano, olive oil, black pepper, lemon rind, garlic, and chives in a bowl
  • Thread the zucchini and the chicken one after the other onto each skewer
  • Salt and pepper the spiedini to taste
  • Grill for approximately 8 minutes or until fully cooked
  • Tip: try to only flip them once while grilling
  • Serve with the salsa and enjoy :)
