This award winning, crowd pleasing, and flavor packed dish is not one to be reckoned with. This Smoked Jalapeno Beer Mac and Cheese is creamy with a punch of spice! The best part about this recipe is that you can adjust the spice level to your audience's taste buds.
Ingredients
- 2 Tbsp Fat Boy All Purpose Rub
- 2 Tbsp Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue
- Sweet Heat Grill & Wing Squeeze by Terrapin Ridge Farms (for garnish)
- 1 Cappelletti Noodles (sub large elbows)
- 1 block Colby Jack Cheese
- 1 block Sharp Cheddar Cheese
- 4 cups Milk
- 2 blocks Cream Cheese
- 1 stick Butter
- 5 Garlic Cloves, minced
- 4 Tbsp All Purpose Flour
- 1 Lager
- 3 Jalapenos, diced
- Zest of 1 Jalapeno
- 3 Tbsp Green Onion, minced (for garnish
Directions
- Preheat the grill or smoker to 300 °F.
- Prep the sauce: In a cast iron pan on the stove on medium add: 1 stick of butter (or beef tallow) and minced garlic. Once butter has melted, add 4 Tbsp flour. Mix with a wooden spoon continuously for 2-3 minutes. Pour in milk and reduce to low. Add cream cheese and stir until melted. Reduce heat to low. Slowly add in 4 cups half shredded colby jack and cheddar cheese. Add 2 Tbsp Fat Boy All Purpose Rub, & 2 Tbsp Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue. Once cheese is fully incorporated, and the consistency is smooth, slowly fold in 3/4 of a lager. Cut the heat and let cool while boiling the pasta al dente.
- In a 12 inch cast iron or grill safe dish, add cooked pasta, and cheese mixture. Fold in remaining shredded cheese, and add additional jalapeno bits for an extra kick.
- Smoke for 1 hour. Garnish with minced green onion, Jalapeno Slices, and a drizzle of Sweet Heat Grill & Wing Squeeze by Terrapin Ridge Farms. Enjoy!
