Ingredients
- 2 Tbsp Fat Boy Premium All Purpose Rub
- 2 Tbsp Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue
- 3 lb 80/20 Ground Beef
- 1 lb Bacon
- 1 Yellow Onion, sliced
- 1 pack American or Colby Jack Cheese Slices
- 2 Beefsteak Tomatoes, sliced
- 1 Lettuce Head, shredded
- Pickle Chips
- 6-8 Potato or Brioche Buns

3 Tbsp Fat Boy Haugwaush Sauce
- 1 Tbsp Fat Boy Premium All Purpose Rub
- 1 Tbsp Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue
- 2 Tbsp Diced Pickles in Pickle Juice
- 1/2 cup Mayonnaise
- Hot Sauce to taste (optional)
- Combine all ingredients and store in the fridge for up to two weeks.
Burger Sauce Ingredients
Directions
- Preheat the griddle to medium high.
- In a large bowl, add ground beef, Fat Boy Premium All Purpose Rub, Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue. Mix together.
- Form about 3” x 3” meatballs, place on a baking sheet and refrigerate for at least 10 minutes.
- Lay bacon on griddle and cook. Once bacon is almost cooked, push the bacon to the side and discard any excess bacon grease.
- Place meatballs on the griddle surface. Cover each meatball in sliced onion lightly season with Fat Boy Premium All Purpose Rub.
- After about 2-3 minutes, using a small cast iron or burger smasher with parchment paper, press down on each ball, flattening them out completely.
- Continue to cook for another 1-2 minutes (until the edges are crispy).
- Flip burgers and cook for another 2 minutes.
- Add cheese and stack burgers to make doubles. Cut the heat and toast buns on the griddle.
- Prepare burger sauce and toppings. Load up your burgers and enjoy!
Recipe Note
Pitmaster Pro Tips: You can make your own ground beef using your brisket trimmings blended with a chuck roast using a meat grinder! The sauce recipe also makes a great dressing for coleslaw.
