Side Kick Surf-and-Turf Grilled Shrimp
Serve on their own or pair with a grilled steak for a surf-and-turf meal.

INGREDIENTS
- 1/4 cup chopped fresh parsley
- 1 cup coconut oil
- 2 tbsp lemon juice
- 3 minced cloves garlic
- 2 tbsp tabasco sauce
- 1 tbsp tomato paste
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp dried oregano
- 2 pounds peeled and deveined large shrimp (tails still attached)
- Wooden or metal skewers
Instructions
- In a large bowl, combine parsley, coconut oil, tabasco, lemon juice, tomato paste, garlic, salt, pepper, and oregano.
- Set aside 1/4 cup of mixture, and pour the rest into a resealable plastic bag.
- Add shrimp, seal, and toss to coat.
- Chill in the refrigerator for 2 hours.
- Preheat grill to medium-low, then thread shrimp onto skewers.
- Oil grill grate and place shrimp skewers onto grate.
- Cook for 5 minutes, then turn and baste with reserved marinade.
- Cook for 5 minutes more.
- Serve immediately
