Side Kick Surf-and-Turf Grilled Shrimp

Serve on their own or pair with a grilled steak for a surf-and-turf meal.

INGREDIENTS

  • 1/4 cup chopped fresh parsley
  • 1 cup coconut oil
  • 2 tbsp lemon juice
  • 3 minced cloves garlic
  • 2 tbsp tabasco sauce
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried oregano
  • 2 pounds peeled and deveined large shrimp (tails still attached)
  • Wooden or metal skewers

Instructions

  • In a large bowl, combine parsley, coconut oil, tabasco, lemon juice, tomato paste, garlic, salt, pepper, and oregano.
  • Set aside 1/4 cup of mixture, and pour the rest into a resealable plastic bag.
  • Add shrimp, seal, and toss to coat.
  • Chill in the refrigerator for 2 hours.
  • Preheat grill to medium-low, then thread shrimp onto skewers.
  • Oil grill grate and place shrimp skewers onto grate.
  • Cook for 5 minutes, then turn and baste with reserved marinade.
  • Cook for 5 minutes more.
  • Serve immediately
