1 cup Knotty Rub

Knotty Wood Almond Wood BBQ pellets

Apple cider vinegar (optional, for spritzing)
Directions
Preheat and Prep
Preheat your smoker to 250°F, using Knotty Wood Almond Wood BBQ pellets. These pellets will provide a mild, nutty smoke flavor that enhances the pork belly.
Trim any excess fat from the pork belly, leaving a thin layer for added flavor and moisture.
Cut pork belly into 1 in. thick strips
Season
Generously apply Knotty Rub all over the pork belly. Ensure that the rub covers all sides and press it into the meat to help it adhere better.
Smoke
Place the seasoned pork belly directly on the smoker grates.
Smoke the pork belly for 30 minutes at 250°F.
Then move the temperature up from 250°F to 270°F for 2 hours and flip the meat halfway through.
Optionally, spritz the pork belly with apple cider vinegar every hour to enhance moisture and add a subtle tangy flavor.
Monitor and Cook
The cook will take around 4 hours. Make sure the pork gets to an internal temperature of 195-200°F.
The pork belly should be tender with a nice bark on the outside.
Rest and Serve:
Once the pork belly reaches the desired temperature, remove it from the smoker and let it rest for about 15 minutes.
Serve up and enjoy!
