Ingredients
- 2 lbs ground bison, cooked (sub 93% lean ground beef)
- 4 large bell peppers
- 1 cup cooked cauliflower, grated (frozen cauliflower rice works too)
- 1 cup Mexican Cheese
- 1 can of Rotel, drained
- ½ TBSP Rainer Garlic & Herb Rub
- ½ TBSP Remy’s Competition Rub
Directions
- Start with firing up your grill at 325°. Cut the tops off the bell peppers and then, remove the seeds and veins.
- Combine ground bison, grated cauliflower, rotel, seasonings, and half of the cheese in a bowl. Stuff the bell peppers with the bison mix and top with the remainder of cheese.
- Place on your grill and cook until the bell peppers become tender. Let sit for 10 minutes and then, SMASH!
