Directions
Prepare the chicken: Using sharp scissors, cut away from the end of the drum, up the bone about 3 inches. Push up the meat and remove any hanging tendons or skin. This might take a minute to get used to, but once you practice on a couple of the drumsticks, you will have this mastered! Season with Sweet Heat Rub by The Spice Guy using Dixie Red Rich & Smokey BBQ Sauce by Old Southern BBQ as a binder.
Preheat your smoker to 275 °F using cherry, hickory or applewood blend pellets, chunks or charcoal.
Smoke the chicken lollipops for 2 hours. Then increase the temperature of the grill to 325 °F.
Prepare the glaze: in a grill safe saucepan add ¼ cup Southbound Sauce by Lane’s BBQ, 1 tsp Sweet Heat Rub by The Spice Guy ½ stick butter. Smoke simultaneously with the chicken.
Once the chicken reaches 165 °F internal temperature, dip into the glaze and place back on the grill or smoker for 15 minutes or until the glaze has set. Be careful, these are addicting!
