Two of my favorite BBQ staples, that I always serve side by side. These two recipes use similar ingredients making it a no-brainer for your Memorial Day BBQ. The beans are sweet and smoky with a little savory. The potato salad is refreshing and crispy. The recipe starts with a delicious candied bacon that can be eaten as a snack, or in a variety of dishes!

Ingredients
- 4 Tbsp Meat Mitch Competition WHOMP! Rub
- 3 lb Thick Cut Bacon
- 1/4 cup Light Brown or Cane Sugar
- Preheat your smoker to 275 °F.
- Season thick cut bacon with Meat Mitch Competition WHOMP! Rub, followed by sugar.
- Place bacon on a baking rack and smoke for 1 hour.
- Remove and let cool. Enjoy as a pitmaster’s snack or use in the following recipes.
- 3/4 cup Pitmaster Bold Competition Barbecue Sauce by Croix Valley Foods
- 4 Tbsp Meat Mitch Competition WHOMP! Rub
- 1.5 Cups Candied Bacon, chopped
- 4 cans Navy Beans, rinsed and strained
- 1 cup Light Brown or Cane Sugar
- 2 Tbsp Paprika
- 1/2 Onion, diced
- 4 cloves Garlic, minced
- 1/4 cup Green Onion, chopped
- 1 teaspoon Cinnamon
- 1 stick Butter

Candied Bacon Baked Beans Instructions
- Preheat your smoker or grill to 275 °F.
- In a dutch oven, add butter, garlic, and onion. Place on grill or smoker and cook for 10-15 minutes.
- Add sugar, paprika, Meat Mitch Competition WHOMP! Rub and Pitmaster Bold Competition Barbecue Sauce by Croix Valley Foods. Cook for another 10-15 minutes.
- Add beans, remaining butter, candied bacon & green onion.
- Cook for an additional 2 hours. Rest for 15-20 minutes and stir.
- Garnish with candied bacon, and a drizzle of BBQ sauce and enjoy!
