This salad combines a few of our favorite things: Smoked pork chops, grilled peaches, burrata, and hot honey.
Kurobuta pork, also known as Berkshire pork, is a heritage breed of pig that originated in England over 200 years ago. The name comes from the Japanese word for "black pig" because the Berkshire pig is mostly black. Kurobuta pork is prized for its flavor, tenderness, and marbling, which gives it a juicier, more tender bite than conventional pork. It's often called "the Wagyu of pork" or "the Kobe beef of pork".
