Prepare the potatoes. Remove skin from the russet potatoes and par boil on the stove for 8 minutes. Remove and let cool.
Preheat your smoker to 250 °F. Using hickory, oak, or mesquite wood.
Quarter or eighth potatoes, depending on size, and add to a grill safe dish.
Add 4-6 pats of butter, covering the potatoes. Season with Prime Time Buttery Beef Rub by PS Seasoning and smoke for 45 minutes to 1 hour or until potatoes are soft to the touch.
Once potatoes are fully cooked. Remove from your smoker, slowly add 2 tbsp of Horseradish Sauce by Terrapin Ridge Farms, ½ cup of heavy cream, ¼ cup of roasted garlic while mashing together.
After the potatoes are mashed, fold in chopped bacon, parmesan cheese, and green onion.
Garnish with remaining chopped bacon, parmesan cheese, and green onion. Sprinkle with Prime TIme by PS Seasoning.
