These are so fun! A must have appetizer for 4th of July or any backyard barbeque, pig shots are basically sausage and bacon cups filled with jalapeno popper filling and smoked to perfection. These delicious Pig Shots use all four products featured in this Hot Grill Summer edition of The Ultimate BBQ Experience!

Ingredients
- 2 Tbsp Fat Boy Premium All Purpose Rub
- 2 Tbsp Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue
- 3 Tbsp Sweet Heat Grill & Wing Squeeze by Terrapin Ridge Farms

1 Tbsp Fat Boy Haugwaush Sauce
- 2 blocks Cream Cheese
- 3 Sausage Links (we like jalapeno cheddar sausage)
- 3 Jalapenos, thinly sliced
- 1/2 cup Shredded Pepper Jack Cheese
- 3 Tbsp Green Onion, minced
Directions
- Preheat the smoker or grill to 275 °F.
- Prep the bacon cups. Slice sausage links about 1/2" thick. Cut bacon in half. Wrap the bacon around the sausage to form a cup (it will resemble a rose). Using toothpicks, set the cup in place, leaving about a 2” space for the filling. Season with Moo Moo Magic Brisket Rub & Seasoning by Southbound Barbecue.
- Smoke the cups at 275 °F for 45 minutes.
While the cups smoke, prepare the filling. In a mixing bowl add two blocks of cream cheese, 1/2 cup shredded pepper jack cheese, 1 Tbsp of Fat Boy Haugwaush Sauce, and 2 Tbsp Fat Boy Premium All Purpose Rub. Mix together and add to a zip lock or piping bag.
- Once the bacon cups have structure and color, remove the toothpicks.
- Cut the corner of the filling bag and pipe filling into cups. Add jalapeno slices to top. Smoke for another 15-20 minutes (until jalapeno is cooked).
- Garnish with Terrapin Ridge Farms Sweet Heat Sauce, and minced green onion. Enjoy!
