How to you heat the Pizzori® Plate?
Insert into the oven 45 min. prior to launching your first pizza and set the oven to your max temperature.

This allows the Pizzori® to heat up, and when you launch your pizza on your dough will get a blast of heat that sustains and cooks a nice, crusty bottom.

Do I preseason the Pizzori® Plate?
Yes and no. It comes pre-seasoned, but as with everything it’s advised to give it a quick rinse, scrub and add some regular oil (your Pizzori® comes with a guide for this).

What's the ideal oven or grill temperature?
As high as it can go! It's made of cast iron, so it can withstand up to 1,200 degrees.

Where do I place it on a grill?
While heating up place all broilers on full. When cooking the pizza turn off broilers or heat source right below the Pizzori® Plate to avoid burning the bottom of your pizza.

Where do I place the plate in the oven?
Place centered in the oven -- ideally on the second highest rack.

What setting should the oven be?
This depends on your preference. Some prefer to blast the pizza with the broiler reducing cooking time to 3-4 minutes, but leaving the crust soft.

Others (like those at Pizzori®) prefer to use the bake or roast convection function and have a longer cook time, but a more crunchy crust. Once you’ve tried the default settings then it’s time to try different placements, temperatures and oven settings to get the pizza just the way you and your family likes it.

Will it fit my grill?
The Pizzori® is 14" by 14", so it fits on most rectangle grills. If you have a round grill, it needs to be at least 20" to fit.

What are the benefits of a perforated pizza peel?
Due to less surface area, then there is less surface for the dough to stick to.

It seems counterintuitive, but the results are pretty significant.

In addition, it allows you to use more flour on the bottom of your dough, but still allow the dough to release the flour before transferring to the oven.

How does a perforated peel affect the cooking process?
It doesn't directly.

The main benefit of a perforated pizza peel is less sticking, and less flour stuck to your dough.

The less flour stuck to your dough, the better your pizza will be.

Can a perforated peel handle a heavy or loaded pizzas?
There is no difference in ability to handle weight between a solid or perforated peel.

It can easily handle even fully loaded pizzas.
