1 16-24 oz Can of Beer
Directions
Preheat your smoker or grill: Preheat your smoker or grill to 325 °F using indirect heat. If you’re using a pellet smoker, we recommend using hickory, oak, or mesquite pellets.
Prepare the chicken: Clean the whole chicken, remove the insides, and pat it dry with a paper towel.
Season the chicken: Apply a small amount of Elijah's Xtreme Bourbon Blueberry Chipotle BBQ Sauce & Marinade to the entire bird as your binder, lightly covering all sides. Season the bird with a heavy layer of Lane’s Spellbound Rub.
Mount the chicken onto the beer can: Open a 16-24 oz can of beer and pour about a quarter of the beer out of the top. Place the beer can on a baking rack in the middle of the smoker or grill. Hold the chicken by its legs supporting the back, placing the chicken over the beer can so that the beer can acts as a support for the chicken.
Smoke your beer can chicken for about 2 hours at 325 °F, or until the chicken has reached 165 °F internal in the breast. Then, remove from the grill or smoker and let rest.
Once cool, remove the beer can, and slice your chicken for serving.
Serve with a side of Melinda’s Jalapeno Ranch and/or Elijah's Xtreme Bourbon Blueberry Chipotle BBQ Sauce & Marinade for dipping.
