Myron Mixon's Money Muscle: Smoked Pork Collar Recipe
Pork Collar, aka: THE MONEY MUSCLE. One of the best cuts on the hog and one you can find at Snake River Farms or just about anywhere.

- Meat Rack
- Aluminum Full Size Pan
- Foil
- Butcher Paper
INGREDIENTS
- 2 Pork Collars
- 1 pack Myron Mixon Pork Injection Peach or Myron Mixon Pork Injection Apple
- Original, Honey Money Rub, and Hot Rub
- Cooking Oil
- 1/2 Gallon Apple Juice
- Hog Sauce
Instructions
Define or trim the pork collar or money muscle. Put the pork collars on the rack.
Mix 1/2lbs of Myron Mixon Pork Injection Apple or Peach and 1/2 Gallon Apple Juice to inject.
Inject pork collars with MM injection.
Apply oil then rub mixture in this order - hot rub, original rub and honey money rub, roll over and do the same.
Place collars onto meat rack handles down. Set your smoker to 300 degrees.
Add your pork collar on the smoker for 2 hours, then pan and add 2 cups of apple juice to the pan.
After 2 hours, place butcher paper over meat and ensure the foil is tight. Put them back in the smoker until the Pork Collar reaches 205 degrees internal temp.
Remove and apply Hog Sauce.
