Ingredients
-
Chicken and Waffle Wing Rub by PS Seasoning
-
Smash That Burger Seasoning by The Flat Top King
-
Apple Moonshine BBQ Sauce by Southern City Flavors
-
3 lb Party WIngs
-
2 cups of Flour
-
1/4 cup Cornstarch
-
1 quart of Frying Oil
-
2 Tbsp Hot Sauce (optional)
Directions
Preheat smoker or grill: Preheat your smoker or grill to 275 °F, using indirect heat. If using a smoker, we recommend using hickory or oak wood.
Prepare the wings: If you have not already sectioned the wings, separate the flats from the drums. Pat dry with a paper towel.
Season the wings: Lightly coat wings with Chicken and Waffle Wing Rub by PS Seasoning and Smash That Burger Seasoning by The Flat Top King.
Place wings directly on the grill grate for 12 minutes each side.
While the wings are grilling, prepare the frying oil: On a burner in a cast iron dutch oven add 1 quart of frying oil of choice. Preheat frying oil to 350 °F.
Prepare chicken fry breading: In a large mixing bowl, add 2 cups of all purpose flour, 1/4 cup of cornstarch, and 3 Tbsp of Smash That Burger Seasoning by The Flat Top King. Combine ingredients.
Remove wings from grill and let cool for 5 minutes. After 5 minutes, add wings to the large mixing bowl with the chicken fry breading. Toss wings in breading and prepare to fry (this is going to lightly coat the wings, giving it a perfect layer of crispiness).
Start frying wings in small batches, until golden brown. Wings should reach a minimum internal temperature of 165-170 °F. Let wings cool on a baking rack.
Toss wings in Southern City Flavors Apple Moonshine BBQ Sauce. Feel free to add 2 Tbsp of your hot sauce of choice if you’d like to add an extra kick. Enjoy!
