Ingredients
- Blackened Seasoning & Rub by Rainier Foods
- Meat Mitch Steer Season Rub
- Lane’s “Sorta White” Sauce
- 4 Cod Filets (or white fish of choice, skin removed)
- White Corn Tortillas
- Red Onion, thinly sliced
- Jalapeno, thinly sliced
- 1 Purple Cabbage, thinly sliced
- 1 can Pineapple Tidbits
- 2 Tbsp Barbecue Sauce (we suggest last month’s Sweet Heat Grill & Wing Squeeze by Terrapin Ridge Farms, but you can use your favorite sauce)
- Cilantro
- 1 Lime
Directions
- Preheat your grill or flat top to medium heat.
- Season the cod filets with Meat Mitch Steer Season Rub and Blackened Seasoning & Rub by Rainier Foods.
- Prepare the slaw for the tacos: Combine onion, cabbage, jalapeno, pineapple, 1 Tbsp lime juice, 1 tsp Meat Mitch Steer Season Rub and 2 Tbsp barbecue sauce. Store in the fridge while cooking the fish.
- Spray the cooking surface with cooking oil. Place the fish filets on the grill or flattop and grill fish for 3 minutes each side.
- Grill the tortillas until they are crispy, yet bendable (for extra flavor on the tortillas, spray tortillas with cooking oil and sprinkle Meat Mitch Steer Season Rub on them, then grill seasoning-side down).
- Assemble the tacos: Add slaw mix to the bottom, and half of a filet to each taco. Garnish with additional cilantro and lime.
- Dip tacos into a side of Lane’s “Sorta White” Sauce and enjoy!
