How to Use On Wings:

  • Start by rinsing the wings and patting them dry with paper towels.
  • Season the wings with your desired seasoning (try 'Que That or Midnight Toker!).
  • Cook the wings until they are golden brown and cooked through to 165°F.
  • If Grilling: Baste your wings with wing sauce in the last 15 minutes of the grilling process.
  • If Frying/Baking: Once the wings are cooked and crispy, toss them in wing sauce.

A LEGACY OF QUALITY: One cold Wisconsin winter day in 1976, the homemade smoker Harold Hanni crafted from an old chest freezer caught on fire. Nearly burning his house down, Harold was determined to find a better way. After several drafts, Harold finally settled on his first smoker, the Model 100. Made by sausage makers, for sausage makers.

A FAMILY OBSESSED WITH FLAVOR: After Pro Smoker was established, Harold realized there was a need for sausage seasonings to go along with his homemade smokers. Harold, along with his son Ken and Ken's wife, Kate, established PS Seasoning in 1986. ⁠ ⁠ The company opened a storefront in Iron Ridge, WI where spices were hand-scooped for customers. The store also sold sausage-making supplies, cheese, and smoked meats. Harold became the company's mascot and the cartoon icon Lil' Harry became synonymous with old-world flavor and craftsmanship. 

FOUR-GENERATIONS STRONG: Today, our facility has grown from a small storefront to a 100,000 sq foot facility with a library of over 3,000 blends. Through new innovation and product development, the next generation of the Hanni family is committed to honoring the past while still preparing for the future. About the Vendor: 

From Home Cook to Executive Chef: Neal started his culinary journey cooking beans and greens with his Granny at the young age of 8, when he could first reach the stove. He completed an internship in a fine dining restaurant when he was 16, which quickly led to a passion for creating delicious dishes with bold flavors.

He joined the US Navy out of high school, and gained experience in managing a kitchen staff of 10, with the responsibility of feeding 3,000 sailors 3 meals a day. During his time in Naval kitchens, he quickly rose through the ranks, eventually becoming an Officer’s Chef and visiting Camp David in his culinary pursuits.

After his US Navy service, a cross country move led him to the kitchen of Wyoming’s oldest bar, where he held the position of Chef and fell in love with open flame cooking.

Now back home in Tennessee, Neal loves the laid back feel of his own kitchen, and though he’s technically a “home cook” now… he’s the best damn home cook you’ll ever meet.

If you can eat it, he can cook it…from Japanese Hibachi to Mexican to Italian and everything in between.

And he even does dishes, too. But sorry, ladies, he’s taken….

The heart of Terrapin Ridge Farms comes from my love of entertaining. I grew up in a family that loved to host parties – our annual Holiday Open House was legendary. My friends loved to hang out at our house and everybody was extra excited when it was Aunt Rosie’s (my mom’s) turn to host the holiday party. She made it look so easy. Her secret was a laid back style and effortless, great-tasting food. The spread looked and tasted like she fussed for days.

I discovered early on I inherited this love of entertaining and ultimately this love is what has drawn me into the world of specialty food. After 10 years in the specialty food industry, I ventured out to buy a small specialty food brand with budding potential. I reached out to a friend of 22 years, and fellow Cleveland native, Brian Coughlin, in July of 2010 and together we purchased the Terrapin Ridge Farms brand. Our brand has grown from a handful of items to over 84 great selling products including savory jams, garnishing aioli squeezes, mustards, dips, dressings, sauces, and now grill and wing sauces. We have developed a reputation as a truly original, high quality food creator.
