Brisket with Dried Fruit Recipe

Try out this unique recipe for a simple but elegant twist on the classic.

Serves:  8

Ingredients

3 chopped onions

3 tbsp olive oil

1 tsp paprika

4 chopped cloves of garlic

1/2 tsp ground allspice

3-1/2 cups chicken stock

1/4 tsp crushed red pepper

1-1/2 cups dry red wine

4 pound beef brisket

3 bay leaves

6oz dried apricots

1-1/2 cups pitted prunes

Instructions

Cook onions and garlic in oil in a skillet over medium heat for 15 minutes, then stir in paprika, red pepper, and allspice and cook for 30 seconds more.

Add wine, bay leaves, and chicken stock, and boil for 10 minutes.

Rub brisket with paprika and place into a large bowl.  Pour over sauce and add dried fruit to bowl.

Cover and chill in the refrigerator overnight.

Heat grill to medium and oil grill grate.

Drain brisket and place onto grill.

Cook, covered, over indirect heat for 2 hours, turning every hour and bating with sauce as needed to keep juicy.

Serve.
